Curried Red Lentils

She used our beloved curry powder to make a stunning creation with bright and vivid colors that reflect the turmeric we use in our seasonings. INGREDIENTS
1 Tbsp Curry Powder
2 Tbsp Coconut Oil (or olive oil)
1 medium Onion, chopped
2 Garlic cloves, minced
1 tablespoon fresh Ginger, grated
2 tablespoon Tomato paste
½ teaspoon Red Chili Pepper Flakes
¾ cup Tomatoes, cut
4 cups Vegetable Stock or water
1.5 cup of dry Red Lentils, rinsed
1 Bay leaf (optional)
salt and pepper to taste
1 can coconut cream or milk
DIRECTIONS
- In a pot over medium heat, add the coconut oil and onions and cook them for about 3 minutes
- Add garlic and ginger, cook for 2 more minutes
- Add the curry powder, tomato paste. red pepper flakes and tomatoes, stir and cook for 3 minutes
- Add the vegetable stock, red lentils, bay leaf and salt, and cook for about 20 minutes
- Add the coconut cream and cook for another 2 minutes
